Chapter One Ceviche, Salsa of Sea!
A beautiful couple came in to dine with us and we heard the husband ask his wife, “Hunny… what’s ceviche?” Fair question sir… so we’re here to answer it for you and anyone else that may be wondering the same thing!
Ceviche, the salsa of the sea, is a seafood dish of fresh, raw fish marinated in citrus with a sprinkling of other flavors (depending on who’s making it)! The citrus juices, whether lemon or lime or both, cure the fish and make it firm, opaque and full of flavor. Although it appears cooked, the texture of ceviche is much more delicate than if the seafood had been cooked by heat. It is best known as a Peruvian dish and the method of preparation is rooted in coastal South American cuisine.
