Meet Operations Manager, Giovanni 'Junior' Ramirez


The story of Giovanni Ramirez is an exciting one and his next Chapter as Operations Manager for Chapter One Food & Drink will be his most interesting one yet!


Born and raised in Brookyn, NY, Giovanni is the son of two incredibly hard working parents. With a retired Navy veteran for a father and a mother in the hospitality industry for over 20 years, Giovanni’s role models raised him to be diligent, dedicated and driven in both his personal and professional life.


At age five, Giovanni’s mother was teaching him how to cook under the mantra that if could learn to navigate in the kitchen, he’d forever be self sufficient and independent as a young man. His passion in the kitchen was inspired by working alongside his mother making lasagna and Sancocho, Puerto Rican beef stew. His true passion is making creative meals out of the freshest ingredients and by the age of thirteen, Ramirez was working in an Italian restaurant in Brooklyn as a cook and dishwasher. Little did he know, his restaurant story had only just begun.


When he moved to New London, he eased into a position making delicious pizza at a local favorite, Illiano's Real Italian Pizzeria. His next role at Olive Garden in Waterford, Giovanni went from cook to server to culinary assistant to being a Corporate Assistant Trainer, opening 32 restaurants on the East Coast, and then landed in his position as Kitchen Manager for six years. He was with the company for a total of fourteen years.


From Olive Garden he moved to Buffalo Wild Wings for four years and then to Arooga’s to serve as their General Manager. While Ramirez loves good service and good food, his most recent position this past year has been the most rewarding one as a stay at home father to 4 beautiful children.


Lucky enough, Chapter One Food & Drink was able to recruit and ask him to add another restaurant chapter to his book and serve as the Operations Manager to oversee both locations in Guilford and Mystic, CT. “Once I connected with the people here, the staff and the guests, that was it for me. Both of these towns are quaint and have a hometown feel to them, which makes their locations so attractive to employees and patrons alike.”


Giovanni cannot wait to help the restaurants continue to grow and thrive under his strong leadership. When he isn’t in the building, you can find him enjoying time with his wife and their children (his oldest is 17 and youngest is 14 months)! The music is always on in the Ramirez household and someone is always dancing so it’s no surprise that his warm energy makes him such great addition to the team!
